Great visit from @kablonfarms this morning. We tasted 4 different sample chocolates which all had the same recipe, the only difference was 4 different fermentations of the Filipino beans. All 4 had completely different profiles, showcasing just how interesting/important fermentation is to creating a quality cocoa bean. Worth noting, @dormousechocs made the samples so the standard of the chocolate making was first class as always. .....and sample 2 was my favourite.

EXXCCCITINNNGG. I've been working on a milk alternative chocolate for a while and I've come up with an 58% Venezulan oat mylk chocolate. To make it better superstar chocolatier @paul_a_young has decided to use it in a Oat Mylk Latte truffle. Treat yourself and get down to one of his London shops this week.
